Chinese Stir Fry Noodles

Stir-fried noodles is a classic dish in China. There are many different kinds of ingredients for Chinese stir fry noodles. The stir-fried noodles I shared today should be called North China noodles. The main vegetables include tomatoes and  bok choy.

The sour taste of the tomato and the fried tomato paste make the noodles taste better.  This recipe is one of the best one-pot meals with balanced nutrition.

Cooking notes:

If you use natural gas, or gas stove, please stir-frying over high heat. You will get more delicious fried noodles.

Steps

  • In a large pot of boiling water, add the noodles to the pot and cook, stirring, about 5 minutes. Drain the noodles and transfer them to the big bowl with cold water then drained again.
  •  In a large, deep wok, heat the vegetable oil to high temperature. Add the minced garlic, the ham blocks, stir-fry until browned on the surface. then add tomato blocks, stir-fry till soft about 3 minutes. Add sugar, light soy sauce and stir-fry for half minute, add rice vinegar, baby bok choy blocks and stir-fry for 10 seconds,  add noodles and dark soy sauce then stir-fry until mixed well,about 20 seconds. Transfer to a shallow plate and serve.

  • 1/10 lb. ham sausage, sliced
  • 1/2 lb. noodles
  • 2 medium tomatoes, cut into pieces
  • 2 bok choy, cut into pieces
  • 1 tablespoon sugar
  • 1/2 tablespoon rice vinegar
  • 1/2 teaspoon salt
  • 1/2 tablespoon dark soy sauce
  • 1 tablespoon light soy sauce
  • 4 cloves garlic, chopped
  • 2 tablespoon vegetable oil

Instructions
