Chicken soup noodles

Noodles originated in China, with a history of at least four thousand years. The phrase “Northern Noodles, Southern Rice” summarizes the characteristics of local staple foods in ancient China.

Noodle making is simple and convenient. If you don’t have time to make a complicated dish, a bowl of noodles, an egg, and a little vegetable are enough for a perfect meal.

Chicken soup noodle is one of my comfort foods.

Ingredients

  • Noodles, 50 g
  • One green onion, chopped
  • 2 baby bok choy, about 70 g
  • One egg
  • Chicken soup cube, 32 g
  • Salt (if need)

Instructions

 1. Wash the baby bok choy, then break them into pieces, set aside.


2. Heat a pot of water, when the water starts to heat up, add the egg, boil until cooked through, transfer to a  bowl.


3. Clean the pot, add 800 ml water, bring to a boil, add noodles, then add the chicken soup cube, boil until the noodles are almost cooked through.

4. Add the baby bok choy, when they turn green, turn off the heat.


5. Put poached egg, baby bok choy, and noodles into a bowl, pour in the chicken soup.

6. The chicken soup noodle is ready.

Cooking Notes

You can cook the egg as soft-boiled or hard-boiled depending on how you want them.

Also, you can add chili oil to the soup if you want.
