Chinese Chive and Egg Pie

Chinese chive and egg pie is a kind of dumplings. Chinese people usually call it “chive box”.It is a nice wheaten dish on dinner table.

Ingredients

  • 1+1/3 cup chive,chopped
  • flour: 1 cup
  • water: 1+1/4 cup
  • 3 big eggs,whisk
  • salt: 2 teaspoon
  • oil: 2 tbsp for fillings and 1 tbsp for egg stir-frying

Steps

  1. Flour and water, mix them,knead them into a dough, let it rest for half an hour.
  2. Heat a wok with oil over low heat, stir-fry the eggs liquid, make them small pieces as much as possible.
  3. Mixed minced stir-fried eggs, chopped chive,oil (they are fillings).
  4. Add salt before making chive boxes.
  5. Take out the dough and knead it for several minutes.
  6. Divide the dough into about 10 pieces, roll each piece into a ball. Roll every piece round wrapper with a rolling pin(just the same as dumpling wrapper).
  7. Put fillings on every dumpling wrapper, fold the dumpling wrapper in half, knead edges.
  8. Pan fry them for about 2-3 minutes on each side, until brown.
