Quick and easy stir-frying vegetables is always my love, because greens cannot leave the dining table. Today’s choy sum stir fry is also one of the dishes I often cook, for it can be seen everywhere in the vegetable market.
As a northerner, I have to admit that there are many more kinds of vegetables in the south than in the north. Before coming to the south of China, I didn’t know the existence of Choy Sum(Please forgive my ignorance). When I made it for the first time, I thought that such thick vegetables with yellow color flowers would not be easy to cook through. But the fact is that it can be served just like other vegetables in a few minutes stir-frying.
Wash the choy sum then cut into sections, oil, chopped garlic, and pinch of salt only will take you five minutes or less, there is no simpler Chinese dish. You will see that simple stir-fried vegetables will add a bit of minced garlic. From the perspective of Chinese medicine, greens are cold in nature, while minced garlic is hot, just in balance. And the special fragrance of garlic as a condiment also happens to be the perfect partner for green vegetables.
