Chinese Egg Fried Rice

Chinese egg fried rice is one of the best one pot dishes for a person. It is my favorite recipe just like fried noodles.

A bowl of leftover rice, an egg, and  kinds of  vegetables in your refrigerator, can be cooked  into a delicious egg fried rice. It is easy to make and perfectly as a main course or side dish. 

Cooking notes:

It is good for this dish to use leftover rice because it is harder to cook easily. You can make rice the night before and put it in the refrigerator.

Ingredents:

ingredients: shrimp, egg, carrot, sausage,pea

  • Carrot about 50 gram, chopped,blanched
  • Pea about 35 gram, blanched
  • One egg, whisked lightly
  • 3 green shallots, chopped
  • Ham sausage or ham about 55 gram, chopped
  • Fresh small shrimp or frozen shrimp, about 60 gram ,cooked
  • Leftover rice, about 400 gram
  • 2 tablespoon oil
  • 1 tablespoon light soy sauce
  • 1/2 teaspoon dark soy sauce

Instructions

  1. Add oil into a wok ,heat over high heat.
  2. Add the egg , stirring often, until set and small pieces.
  3. Add the shrimp, ham sausage, carrot, pea, rice ,stirring about 5 minutes until mixed while let rice separate(add a little water if need).
  4.  Add light soy sauce, dark soy sauce, and chopped green shallot,stirring until mixed well
  5. Serve.
