Chinese Noodles with Fried Soybean Paste and Egg

Soybeans not only deduced the tofu that amazes everyone, but also made delicious soybean paste. Stir-fried pork with soybean paste is the soul of classic Beijing noodles with fried paste included kinds of vegetables. Simple soybean paste and egg fried with the noodles also accompanies the daily life of northerners.

I think fried eggs and soybean sauce is the easiest fried soybean paste sauce I’ve ever made,  just add scrambled eggs to the boiling soybean paste sauce. Watching the bubbling sauce, smelling the aroma of the sauce floating in the air, this is probably the taste of the kitchen in the dull days that we are obsessed with.

There are other ways to eat fried eggs and soybean paste sauce, with fresh or blanched vegetables for dipping. Including cucumber, lettuce, radish, spinach, cabbage and more. Just like pancakes can roll all dishes, in the eyes of the Northeast people of China, all kinds of vegetables can be eaten with dipping soybean paste sauce.

 

No time to cook, what should I do? For noodle lovers, this is not a problem. Make a small bowl of fried soybeans paste with egg sauce, boiled a bowl of noodles and some green vegetables. Well,  get a nutritious, delicious and fast meal. Vegetarians can also enjoy it.

Cooking Tips:

  • It is best to use handmade noodles, which are more chewy and better to eat with sauces. Of course, if not, any noodles will be fine.
  • The scrambled eggs are first transfered to a plate and then mixed with the sauce at the end, in order to keep it tender.

Equipment

  • Pot for boiling
  • Wok for stir-frying

Ingredients
  

  • One egg, beat up fully
  • 20 gram scallion chopped
  • 5 tablespoon soybean paste, stir in 5 tablespoon water
  • 250 gram handmade noodles
  • 3 tablespoon oil

Instructions
 

  • Add oil to the wok, heat over medium heat, add scallion chopped, stir-frying for 5 seconds, then add soybean paste sauce, boiling it
  • Add 3 tablespoon to the wok, heat over medium heat, add egg liquide, stir-frying until cooked, transfer to a plate
  • Add fried egg to the soybean paste sauce, mixed, turn off the heat until the sauce boiling again.
  • Add water to the pot. bring to a boil, then add noodles, boiling until cooked, fish out.
  • Add the egg and soybean sauce to the cooked noodles, mixed well, serve warm.
