Chinese Shredded Potatoes Salad

Shredded potato salad is a dish that I like and often make. From the perspective of traditional Chinese medicine, potatoes are cold in nature, so I use hot chili to match it. The compendium of Materia Medica records that eating potatoes raw can detoxify, and eating them cooked can relieve coughs caused by heat.

Shredded potato salad boasts a refreshing and tangy flavor with a hint of spiciness, and a crisp and tender texture. Blanched potato shreds retain their delicate texture, and the addition of vinegar, chili oil, and cilantro adds layers of tangy, spicy, and fragrant notes. Shredded potato salad is a popular homemade dish originating from northern China. Due to the widespread cultivation and affordability of potatoes in China, this dish quickly became a common cold dish across the country. Ingredients

  •  Two potatoes, about 500 g
  • Garlic, 4 cloves, chopped
  • Fresh red chili, chopped
  • Scallion, one, chopped
  • Vinegar, 2 tbsp
  • Sugar, 1/2 tsp
  • Salt, 1/2 tsp
  • Oil, 3 tbsp
  • Pepper corns, 30

Instructions

1. Chop the garlic, red chili, and scallion.

2.Peel the potatoes, wash them, then shred them with a hand grater.

3. Wash the shredded potatoes, to remove the starch on the surface of them.

4. Heat a pot of water, bring to a boil, blanch the shredded potatoes for 30 seconds after the water boils.

5. Let them go through cold water, transfer to a big bowl.

6. Add seasonings to the shredded potatoes.

7. Heat the oil and pepper corns until the oil stars to smoke, drizzle over the shredded potatoes.

8. Combine well with chopsticks.

9. The dish is ready.
