Chongqing small noodles

Chongqing small noodles seems to be more popular than hot pot, and Chongqing people usually use it as breakfast.Although it is called noodles, it tastes very rich.

Strictly speaking, small noodles refer to the spicy noodles seasoned with onion, garlic and vinegar. The noodle sauce is the soul of it.

Ingredients:

  • 1/3 lb.  thin noodles
  • 1 green onion,chopped
  • 3 cloves garlic ,chopped
  • 1/4 tablespoon ginger, chopped
  • 1 tablespoon peanut crushed
  • 1/2 mustard tuber,minced
  • 1 tablespoon pepper oil (or powder)
  • 1 teaspoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon chili oil
  • 1/4 tablespoon lard
  • 1 teaspoon salt
  • 1 tablespoon monosodium ( or Chicken essence)
  • 2 cup bone soup,boiled( if no, boiled water is ok)
  • vinegar (optional)

Instructions

  1. Mixed all the ingredients except noodles.
  2. Boil the noodles till served.( the time depends on the diameter of noodles)
  3. Put noodles in mixed soup.

  • pot for boil water

Ingredients
  

  • thin noodles 200 g

  • 1 tbsp Red oil chili

  •  2 cloves Garlic,chopped

  • 1 green onion, chopped

  • 1 tbsp Soy sauce

  • 1 tbsp Soy sauce

  • 1 tbsp pepper oil(or pepper powder)

  • 1 tsp sesame oi

  • 1 tsp  lard

  • 1/2 tsp salt

Instructions
 

  • add all ingredients to bowl except noodles then mixed them

  • add  bone soup or hot water(if no bone soup)

  • boil noodles till served

  • add served noodle to sauce soup

  • finished
