Chongqing Small Noodles

Chongqing small noodles seem to be more popular than hot pots, and Chongqing people usually use it as breakfast. Although it is called noodles, it tastes very rich.

 The reason why it is called small noodles may be because it originally only has seasonings and no meat or it may be because it can be found everywhere and can be eaten in a short time.

Strictly speaking, small noodles refer to spicy noodles seasoned with onion, garlic, and vinegar. The noodle sauce is the soul of it.

Ingredients:

  •  Handmade thin noodles, 150 g
  • Scallion, 8 g, chopped
  • Garlic clove, 2, chopped
  • Light soy sauce, 1 tbsp
  • Vinegar, 1/2 tsp
  • Sesame oil, 1/2 tsp
  • Pepper powder, 1 tsp
  • Chicken powder, 1 tsp
  • Lard,1 tsp
  • Chili oil, 1/2 tbsp
  •  Hot water, 200 ml, for noodle soup

Instructions

1. Chop the scallion and garlic.

2. Add chicken powder, pepper powder, chili oil, light soy sauce, vinegar, sesame oil, garlic chopped, and lard into a large bowl.

3. Add 200 ml hot water to the bowl, set aside.

4. Heat a pot of water, blanch baby bok choy first, fish out, then boil noodles until cooked through, about 3 minutes, turn off the heat

5. Transfer the cooked noodles to the bowl with seasoning mixture, top with baby bok choy and scallion chopped.
