Cold Sesame Noodles with Shredded Chicken

For fitness enthusiasts, chicken breast is a healthier source of high-quality protein. But chicken breasts taste harder than other meats. How to make chicken breasts delicious ? Cold noodles with shredded chicken is also a good choice of one dish meal. In the hot summer, the cooked noodles are cooled down to room temperature, mixed with shredded chicken and cucumber, and then  toped with sesame sauce, a well-known Sichuan snack appears.

It’s as famous as hot dry noodles and has similar cooking steps.  It’s just simply cooling the noodles, without adding ice water, the noodles taste more vigorously. The protagonist is noodles, but sesame sauce is a must. Chicken shredded give protein and cucumbers supplement vitamins. If you want to make a quick and easy nutritious dish in hot weather, try it.

Ingredients

  • 100 gram noodles
  • One chicken breast
  • 3 tablespoon sesame paste
  • 1 tablespoon light soy sauce
  • Red chili oil (optional)
  • 1 teaspoon salt
  • 1/2 tablespoon shaoxing wine
  • 2 teaspoon sugar
  • 1/4 teaspoon peppercorn powder
  • 3 tablespoon water for sesame paste sauce
  • 3 gram scallion, cut into sections
  • 9 gram ginger, sliced
  • 100 gram cucumber, shredded
  • 1 coriander, chopped

Instructions

  1. Add water, add ginger sliced, scallion sections and peppercorns, shaoxing wine and chicken breast to a pot,  boiled till cooked through, then shredded by hand, set aside
  2. Add water, sesame paste, light soy sauce, sugar, salt to a bowl, stirring in one direction, about 3 minutes until mixed well,
  3. Boiled noodles until cooked through( the time depends on the thickness of noodles), remove and let them cool.
  4. Add chicken breast shredded and remaining ingredinets to noodles, topped with sesame sauce, mixed well, serve immediately.
