Dried scallops

Scallops, also called Yaozhu, are a kind of dried seafood. From the perspective of traditional Chinese medicine, it has the functions of nourishing yin and nourishing the kidney, reconciling the spleen and stomach, and can treat symptoms such as dizziness, dry throat and thirst, and weak spleen and stomach.

It is worth mentioning that its taste is particularly delicious because of being in rich sodium glutamate. There is an ancient saying:“ Three days after eating scallops, chicken and shrimp are still boring.”  Chinese people use it more to cook porridge or soup.

How to choose

(1) Choose bright yellow ones, and those with hoarfrost will have a strong umami taste.

(2) The shape is as complete as possible, short cylindrical shape, firm and full, and the meat is dry and hard.

(3) Don’t choose scallops with incomplete cracks.

How to prepare

Dried Scallops should be soaked in warm water before cooking for about an hour.
