Easy Spicy Chow Mei Fun and Spinach Soup in 15 Minutes – One Person Meal

Fried rice noodles are a classic delicacy from southern China, particularly popular in Guangdong and Fujian provinces. As a widely-loved street food, they are not only nutritious but also cherished for their unique texture. I also often like to make fried rice at home.

Today’s fried rice noodles are added with hot dog sausage, kohlrabi, and most importantly, spicy oil. It tastes spicy and delicious. In order to save time, I used the ready-made Lao gan ma chili oil. For those who like chili, it is well worth trying.

Spicy Rice Noodles Stir-Fried(辣炒米粉), Spinach Soup

  • A wok for stir-frying
  • A pot for boiling


  • - Spicy Rice Noodles Stir Fried
  • Hot dog sausage, 4 oz, shredded
  • Dried rice noodles, 3.5 oz
  • Hot water ( for soaking the rice noodles)
  • Cabbage, 5 oz, shredded
  • Lao gan ma spicy chili sauce, 1 tbsp
  • Dark soy sauce, 1 tsp
  • Light soy sauce, 1 tbsp
  • Salt, 1 tsp
  • Oil, 3 tbsp(for stir-frying rice noodles)
  • --Spinach soup
  • Spinach, 6 oz
  • Hot water, 1 cup
  • Scallion, 1 tbsp
  • Oil, 1 tbsp
  • Salt, 1/8 tsp


  • Boil a pot of water.
  • Shred the hot dog sausage.
  • The water is boiling and soak the dried rice noodles, cover and soak for 10 minutes.
  • Shred the cabbage.
  • Make a sauce with lao gan ma spicy chili sauce, dark soy sauce, salt, light soy sauce.
  • Add oil to a soup pot, add chopped scallion, add hot water, bring to a boil, add spinach, bring to a boil again, add salt, turn off the heat.
  • Fish out the soaked rice noodles.
  • Add oil to a wok, stir-fry the shredded hot dog sausage first, then add the cabbage, stir-fry until cooked, add rice noodles and the sauce, mix well, turn off the heat.
  • The meal is ready.
