Hunan Beef Stir Fry

Hunan Beef Stir Fry is a famous dish in China. Compared with the compound flavor of Sichuan cuisine, Hunan cuisine is more pure and spicy. They prefer to add dried chilies or chili powder. If you’re a fan of chilies, use only chilies as another ingredient.

I’m not a big chili eater, and it’s better for my taste to add Paojiao or Chopped peppers which were fermented. In this dish, I used Chopped chili peppers instead of dried chilies. Celery and beef are a perfect match.

The point of this recipe is on marinating the beef to cook it tender. Egg white and starch are essential ingredients for marinating beef.

Ingredients

  • 330 gram beef, shredded
  • 75 gram celery, shredded
  • 8 gram ginger, shredded
  • 3 cloves garlic, chopped
  • Duojiao 1/2 tablespoon
  • 1/2 teaspoon salt
  • 1 tablespoon starch( corn starch or potato starch)
  • 1 tablespoon oil for marianting beef
  • 3 tablespoon oil for stir-frying
  • 1/2 teaspoon pepper powder
  • 1/2 tablespoon light soy sauce
  • One egg white

Instructions

Chinese hunnan beef instructions

  1. Marinate beef with oil, starch, pepper powder, light soy sauce, salt, egg white for 10 minutes.
  2. Add oil to a wok, Heat  over medium-high heat, add marinated beef ,stir-frying for a while, until the beef changes color, transfer to a dish
  3. Add garlic and ginger shredded to the wok,, stir-frying for 5 seconds, add Duojiao , then add celery, beef, stir-frying until cooked through.
  4. Serve with rice
