Saozi noodles which was used to worship their anceestors by people lived Shanxi region before is a traditional Shaanxi province specialties food. That is indispensable for important occasions such as weddings and birthday parties. My recipe today is vegetarian Saozi noodles, no pork. Vegetarian lovers will love it even more. I like saozi noodles, more because of its sourness comes from a lot of vinegar added.
How many ingredients for a bowl of noodles
Let me count the vegetables: black fungus, tomato, potato, daylily, egg, scallions, ginger, chive, pepper powder, vinegar, salt. When we see so many ingredients prepared for a bowl of noodles, it is enough to see that Shanxi people value and like noodles.
How to cook
- 1.Fully soak the fungus and day lily, finely chop, mince ginger, green callions, chives, dice tomatoes, and potatoes.
- 2. pan-frying the egg
We all know that shredded pan-fried egg is an essential ingredient for many toppings, that is, beat one egg thoroughly in a bowl, pour the egg liquid into the pan, and pan-fry them into thin slices. Then use a knife to cut into small diamond-shaped pieces, or shred. Put them in a bowl and set aside.

Add 3 tablespoon oil to the wok, heat over high heat, add green scallions chopped first ,stir-frying for some seconds, then add chopped black fungus, dayliy, diced tomato and potato, stir-frying for one minute, then add 200 ml water, 1/2 teaspoon salt, 1/2 teaspoon light soy sauce cooked through, set aside.

Add 1 teaspoon oil to the wok, heat over high heat, add ginger chopped, stir-frying for some seconds, then add pepper powder, 1 teaspoon vinegar, salt, 500ml water, bring to a boil, turn off the heat.
- 6. Add soup and egg slices shredded, stir-fried vegetables to the noodles, top with chive chopped, serve warm.

- One potato, about 200 gram, peeled, diced
- 5 pieces black fungus, full soaked, sliced
- 10 gram dried daylily, soaked, chopped
- 2 scallions, chopped
- 100 gram noodles
- One egg
- 6 gram ginger, chopped
- 2 tablespoon vinegar
- 1 teaspoon salt
- 1/2 teaspoon pepper powder
- 3 tablespoon oil for stir-frying ingredients
- 1 teaspoon oil for soup
- 1/2 tablespoon light soy sauce
