Today’s recipe is Snow Fungus Soup with Red Dates (银耳红枣羹)that can nourish yin and promote fluid productions.

White fungus also known as tremella or snow fungus, is valued in Traditional Chinese Medicine (TCM) for the following benefits:

Preparation:

Instructions

1. Soak the snow fungus into a bowl with 500 ml water for an hour.

2. Tear the soaked snow fungus into small pieces

3. Add Snow fungus, wolfberry, crystal sugar, red dates, and 1200ml water to a soup pot.

4. Cook on low heat for an hour or more, until a gelatinous state appears.

5. Turn off the heat, the snow fungus soup is ready.

  • Snow fungus, 7 g
  • Wolfberry, 5 g
  • Crystal sugar, 12 g
  • Chinese red dates(jujube), 9 g
  • Water, 1200 ml

Instructions
 

  • Soak the snow fungus into a bowl with 500 ml water for an hour.
  • Tear the soaked snow fungus into small pieces
  • Add Snow fungus, wolfberry, crystal sugar, red dates, and 1200ml water to a soup pot.
  • Cook on low heat for an hour or more, until a gelatinous state appears
  • Turn off the heat, the snow fungus soup is ready.
