Stir Fried Noodles with Beef

The stir-fried noodles with beef is one of my favorite takeout dishes made at home. Noodles are always present in my fridg. Whether it is a simple bowl of Yang chun mian or delicious one pot stir fried noodles , they are the source of my comfort food.

The secret of stir-fried noodles with beef is how to make beef tender, just like beef congee, I added a little soda powder for marianting beef. No need a pressure cooker, or long time of cooking, we will still get flavourful beef after stir-frying. About the vegetables that will be fried with noodles, only take what you have, I added green pepper and onions. You can also add carrots, spinach, baby bok choy, or other things you have in the refrigerator, and just cut them into shreds and stir fry them together with noodles.

In Chinese kitchens, before stir-frying raw meat, we will marinate in advance. In order to remove the smell of the meat, usually add cooking wine,  pepper, or ginger. I added ginger shredded, white pepper powder, light soy sauce , starch to the beef for marinating in today’s dish. Mix these with beef by hand, massage the beef, and let it stay in the refrigerator for at least half an hour.

Which noodle to choose

If you are cooking fried noodles, either thick noodles or thin noodles are fine, as long as you like, but the cooking time must not be too long. When there is no white core in the noodles, turn off the heat immediately and transfer to the plate.

Ingredients
  

  • 250 gram noodles
  • 110 gram onion, shredded
  • One green pepper, seeded, shredded
  • 100 gram beef, shredded
  • For marinating beef
  • 1 teaspoon oil
  • 1 tablespoon starch
  • 7 gram ginger, shredded
  • 1 teaspoon light soy sauce
  • 1 teaspoon oil
  • 1 teaspoon starch
  • 1/2 teaspoon soda powder
  • For stir-frying
  • 1 tablespoon light soy sauce
  • 1/2 teaspoon dark soy sauce
  • 1/4 teaspoon salt
  • 3 tablespoon oil

Instructions
 

  • Marinated the beef shredded with white pepper powder, ginger shredded, soda powder, starch, oil, light soy sauce, let them stand in the fridge for at least half an hour
  • Add water to a pot, bring to a boil, then boiling the noodles until cooked through( when there is no white core), turn off the fire immediately
  • Transfer to a plate
  • Add 3 tablespoon oil to a wok, add the beef, stir fry until the meat changes color, add the green pepper and onion shredded, stir frying for one minutes until the onion becomes transparent, add boiled noodels, light soy sauce, salt, stir fried for about 3 minutes.
  • Serve immediatedly.
