Stir-fried Potatoes, Green Pepper and Eggplant(Di San Xian)

Stir-fried potatoes, green pepper and eggplant is a well-known traditonal dish in Northeast of China. The three common ingredients will be soft and delicious after deep-fried.

This dish may be a little oily, but you can use oil-absorbing paper to absorb some oil of deep-fried ingredients, which will make it healthier. Seasoned garlic sauce is finally added when stir-frying, but it is indispensable.

Ingredients:

  • One eggplant,  cut into pieces
  • One green pepper, break into pieces by hand
  • Two medium size potato, peeled, cut into pieces

For sauce 

  • 3 cloves garlic, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon sugar
  • 3 tablespoon light soy sauce
  • 2 tablespoon corn starch
  • 5 tablespoon water

Instruction

  1. Mixed all the sauce ingredents well in a bowl.
  2. Add oil to a wok, heated over high heat, add potatoes pieces, then deep-fried untill cooked through, transfer to a dish
  3. Then deep-fried eggplant pieces untill cooked through, then transfer to a dish
  4. At last deep-fried the green pepper, only 3-5 seconds, then transfer to a dish
  5. Heat the sauce in a new wok, bring to a boil, add the deep-fried ingredients, stir-fry for 1 minute, until they are evenly covered with sauce.
  6. Serve with rice.
