Tomato and Egg Stir-Fry

Tomato and egg stir-fry is a well-konwn simple Chinese dish cooked at home. Spending only 10 minutes, You will get the delicious taste of tomato and egg. I don’t know who invented this dish, but they are a perfect combination of sour tomato and tender eggs.

Serving it with rice, let the juice of the dish penetrate into every grain of rice, a spoonful of rice and dish will give you great satisfaction.

Ingredients

  • 3 medium tomatoes, cut into pieces
  • 2 eggs, whisked
  • 2 green scallion, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 2 tablespoon oil

Instructions

  1. Add 1+1/2 tablespoon oil to a wok, heat over medium-high heat.
  2. Add egg liquid, cook stirring until they are lumpy, remove to a bowl, set aside.
  3. Add remaining oil to the wok, add sugar and diced tomatoes, stir-frying about 3-5 miuntes.
  4. Add stir-fried eggs, salt, and green scallion, stirring about half minutes, mixed well, turn off the fire.
  5. Serve with rice.
