The Chinese have a tradition of eating wild vegetables included toona sinesis in spring since ancient times. There are also many ways to cook toona sinesis, mixed salad, deep-fried, stir fried with eggs which is today’s recipe. Toona sinesis has a special fragrance that mixes with the aroma of scrambled eggs to refresh your taste sensation.
From the perspective of traditional Chinese medicine, toona sinensis is neutral in nature, bitter in taste, can dispel wind, remove cold, and relieve pain. This is also one of the reasons why people eat wild vegetables in spring. Compared with ordinary vegetables, its medicinal and health care value are stronger. Spring is the season when yang qi begins to grow. All kinds of wild vegetables are born in response to yang qi, and it is a once-a-year opportunity. Eating wild vegetables is also in line with the needs of spring health.
Cooking wild vegetables does not require more seasonings, a little salt is enough. What we want to taste is its most original taste, and what we eat is the taste of spring. I also didn’t let it go through the blanching step, and mixed it directly with the egg liquid, in order to get its original flavor.
