Wontons in Chili Oil

Chili can help people who lived in palces with humid cold climate to remove wet cold air in their bodies. I think it is one reason that chili and chili oil are discovered everywhere in Sichuan. As a famous street food of Sichuan, wontons in chili oil can’t  be replaced. Generally only meat stuffing is in this wonton. Of course you may add vegetables or other ingredients you love to the fillings.

Wonton has different names in different places of China. People in Guangdong province called it “Wonton “, crowd belonged to Sihuan named it “Chao Shou”, and  northerners called it “Hun Dun”. For me they are only small dumplings. Also we can find dozens of  cooking ways for wonton soup included clear soup, broth, seafood soup, laver egg shredded soup etc.

It is a happiness thing to have a bowl of wonton soup in cold winter.

Ingredients

  • About 200 gram wonton wrappers

For fillings

  • 200 gram pork stuffing
  • 1 table spoon light soy sauce
  • 3 gram ginger, chopped
  • 10 gram scallion, chopped
  • 1/4 teaspoon salt

For wonton soup

  • 1/4 teaspoon sugar
  • 2 teaspoon light soy sauce
  • 2 teaspoon chinkiang vinegar
  • 1/4 teaspoon sesame oil
  • 1 tablespoon chili oil
  • 5 gram green scallion, chopped

Instructions

  1. Add ingredients for fillings to a big bowl, stirring  in one direction, about 5 minutes, mixed well
  2. Put some fillings on one wrapper, roll up into a cylinder, compress the edge, and connect the two ends together, finish all the wontons
  3. Take a pot, boiled water and add some wontons to the pot, boiled through about 5 minutes( the time depends on the wrapper thin or thick), remove to a bowl.
  4. Add  all the ingredients for wonton soup, mixed well, serve immediately.

Ingredients

  • 3 gram ginger, chopped

  • 1 scallion, green part only, chopped

  • 1/4 teaspoon salt

  • For wonton soup : 1/4 teaspoon sugar

  • 2 teaspoon light soy sauce

  • 2 teaspoon chinkiang vinegar

  • 1/4 teaspoon sesame oil

  • 1 tablespoon chili oil

  • 5 gram green scallion, chopped

Instructions
 

  • Add ingredients for fillings to a big bowl, stirring  in one direction, about 5 minutes, mixed well
